Just made some myself, practically the same way. I prefer the LEM Backwoods jerky mixes to the Hi-Mountain
I am a big fan of whole muscle cuts too, and I cut them thick. I usually go light on the smoke, since many of the cures already contain smoky flavors and its easy to over smoke.
