Delicious Catfish Dinner

WOW,I don't fish for or eat much catfish,but this was one of the best fish I ever ate.A guy at work caught 2 coolers full of 7-10 lb cats from a spring fed private lake just up into Michigan,brought em into work next day and gave em to anyone who wanted one,he had them gutted and iced real good,so I took one home,skinned it and wanted to smoke it.I rubbed with olive oil,salt and pepper,smoked it for about 2 hr and basted with garlic butter 4 or 5 times,what a meal with fried green tomatoes and fresh zuchinni,and some good grape juice.Sure wish we had a lake full of these fish around here,simply awesome.

A nice light smoke,great for fish and chicken,but that's about all I use anymore since I have a good source.I did get some fresh downed hickory limbs last week and gonna cut them in chunks and try em out,today with some ribs
